When in 1999 the former Lexington Brewing Company closed its doors, Pearse Lyons the first Irishman to achieve a formal degree in Brewing and Distilling, saw an opportunity to fulfil his dream. Lyons took over the brewery and resurrected the brewing tradition of Lexington, a tradition that dates back to the 1790s.
This month we have some great craft beer on offerfrom Lexington Brewing and Distilling. Kentucky Ale is a blend of two classic beer styles, Irish red ale and English Pale ale. Representing the best of both, it is crisp yet malty and rich. Also on offer is the Kentucky IPA, a floral and citrus dominated American style IPA. Both are available at 5 for €10.
We also have the Kentucky Bourbon Barrel Ale at 4 for €10 this month. This uses the Kentucky Ale as a base aging it for six weeks in freshly emptied bourbon barrels to soak up the fresh bourbon and oak flavours. What began with just five barrels ten years ago quickly became the flagship beer of the brewery and now there are 5,000 barrels aging at any one time.
