Founded in 2005, Paco y Lola is the largest cooperative in Galicia's Rías Baixas region. It now has over 430 members, farming 230 hectares across the premium Salnés Valley sub-region. They were awarded the prestigious “World’s Best White Wine Producer Trophy 2025” at the International Wine & Spirit Competition (IWSC).
The climate in the Salnés Valley is maritime with vineyards located close to the Atlantic Ocean. The cooperative is dedicated to the local white Albariño grape variety. The vines are trained on a traditional high trellis system which allows for air circulation and protection from the sun. The vineyard soils are granitic and free draining which requires the vines to develop very deep roots and aids a true terroir character.
Head Winemaker, Cayetano Otero, is widely regarded as one of the top winemakers in Rías Baixas. He and his team produce a diverse range of varietal expressions from the Albariño grape.
