Founded in 1860, Champagne Ayala has a long and storied history and the house was brought back to its former glory in fine style when Bollinger bought it in 2005. Often referred to as ‘Bollinger’s little sister’, Ayala runs its own show and creates wonderful Champagnes.
Champagne Ayala was established by Edmond de Ayala, a visionary who introduced one of the first “dry” Champagnes in 1865, challenging the sweeter styles of the time. Located in the Grand Cru village of Aÿ, the house has long championed a clean, fresh, and balanced approach to winemaking. Ayala’s style is defined by the pure expression of Chardonnay, supported by a meticulous blending process and low dosage across its range. All cuvées are crafted on-site, with grapes sourced from over 70 crus across Champagne.
