The Languedoc typically enjoys a Mediterranean climate but Domaine de L’Aigle is one of Limoux’s highest altitude estates, perched in the Pyrenean foothills, which helps moderate the temperature in the vineyards. This cooler microclimate is ideal for growing the classic Burgundian grape varieties, Chardonnay and Pinot Noir . Domaine de L’Aigle has been certified organic and biodynamic since 2018 and in 2020 Gérard Bertrand was awarded ‘Green Personality of the Year’ by Drinks Business.

In the winery, Gérard Bertrand uses gentle extraction techniques during the fermentation in modern stainless-steel vats. Quality French oak is used to slowly age the wines, all the while ensuring the pure cool climate fruit is respected.
