Description

Dingle Distillery continues to produce some of the most intriguing whiskies in Ireland. This limited-edition single pot still Irish whiskey using a traditional mash bill of malted and unmalted barley, distilled in copper pot stills before ageing for 11 years. Their use of Pedro Ximénez sherry casks makes this something special. The rich sherry cask flavours add a dried fruit sweetness and richness to the pot still spice character.

Tasting Note

On the nose, rich aromas of cooked dates and raisins intertwine with burnt caramel and maple syrup. The palate is velvety and mouth-coating, unfolding layers of sultanas and chocolate coated cherries balanced by a drizzle of golden honey. The finish is lingering and warming with charred oak and classic pot still spices of clove and ginger, lifted by a bright hint of orange zest.
