Micil Distillery is reviving the art of whiskey-making in Galway. In 2020, the family laid down the first whiskey distilled in Galway in more than a century. While their own spirit matures, they carefully source, finish, and bottle selected Irish whiskeys that reflect the distinctive style of “Galway Whiskey” they are bringing back to life.
Micil Earls Island Irish Whiskey is a homage to the city's old distilling heritage and the wine merchants who once traded along its docks. It’s initially matured in ex-bourbon casks before being finished in first-fill peated American oak and first-fill Bordeaux red wine casks. This unique maturation creates layers of rich fruit, gentle smoke, warming spice, and oak influence.
