Toro Albalá are one of the few bodegas to still produce statically aged Pedro Ximenez wines in the small Andalucían region of Montilla-Moriles. Laid down in large, old American oak casks in 1990, this wine was aged oxidatively for 28 years to give an unctuously rich and full-bodied wine. Intense aromas of candied fruits, dates and figs are joined on the palate with flavours of coffee, toast and tobacco.A unique style of wine that would pair incredibly well with strong cheeses and desserts.
