Santenay enjoys a continental climate with warm, dry summers and cool, extended winters so ideal for growing Chardonnay and Pinot Noir.
Antoine Olivier is the great-grandson of the estate's founder, and along with his daughter, farms his vineyards without herbicides and pesticides. He believes his best work is done in the vineyard, thus ensuring his grapes arrive at the cellar at optimum condition allowing for minimal intervention in the winemaking.
After hand harvesting, pressing and fermentation the wines age for up to eighteen months in French oak in the Domaine's ancient cellars.
